Garlic Butter Steak Bites with Sweet Potatoes
Quick, juicy, and feels like something you’d order at a chic mountain lodge.
There’s something timeless about steak and butter — rich, cozy, unapologetically indulgent. But this isn’t a heavy, fussy meal. These Garlic Butter Steak Bites with Sweet Potatoes are the kind of dinner you can make in under 30 minutes and still feel like you’re dining somewhere with a fireplace and a view of snow-dusted pines.
It’s the perfect “treat yourself” dinner — high in protein, beautifully balanced, and simple enough for a weeknight.
Ingredients (Serves 2)
1 pound sirloin or ribeye steak, cut into 1-inch cubes
2 medium sweet potatoes, peeled and cubed
3 tablespoons butter (or ghee for dairy-free)
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon sea salt
½ teaspoon black pepper
1 tablespoon fresh rosemary or thyme, chopped
Optional: a squeeze of lemon and a sprinkle of flaky salt for finishing
Instructions
1. Roast or pan-fry the sweet potatoes.
Toss your cubed sweet potatoes in 1 tablespoon olive oil, smoked paprika, salt, and pepper.
Roast in the oven at 400°F for about 20–25 minutes (or pan-fry in a skillet until golden and tender).
2. Sear the steak bites.
While the potatoes cook, heat 1 tablespoon olive oil in a large skillet over medium-high heat.
Add the steak cubes in a single layer — don’t overcrowd the pan. Sear for 2–3 minutes per side until beautifully browned. Remove and set aside.
3. Make the garlic butter.
Reduce heat to medium. Add butter to the same pan, then toss in garlic and herbs. Let it sizzle for 30 seconds until fragrant.
4. Combine and finish.
Add the steak back into the pan, toss in the garlic butter until coated, and spoon everything together for a minute or two.
Finish with a squeeze of lemon and a pinch of flaky salt if you want that extra sparkle.
Why You’ll Love It
It’s comforting but balanced — savory steak meets caramelized sweet potato sweetness, all wrapped in buttery, garlicky perfection.
You can serve it as-is for a cozy solo dinner, or dress it up with a side salad and a glass of red for an easy date night.
Live Deliciously Tip
For a little luxury: toss the finished dish with a drizzle of truffle oil or top with a fried egg.
Because even simple meals deserve a touch of drama.
