Pasta e Fagioli

Cozy, hearty, and generously bean-forward

Pasta e Fagioli was always meant to be abundant, and adding kidney beans gives it deeper color, heartier texture, and that classic trattoria feel. This version stays simple and soulful, with two kinds of beans doing the quiet work of nourishment.

Ingredients

(Serves 4–6)

  • 2 tablespoons olive oil

  • 1 small onion, finely chopped

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 4 cloves garlic, minced

  • 1 teaspoon dried oregano

  • ½ teaspoon red pepper flakes (optional)

  • 1 tablespoon tomato paste

  • 1 (14.5 oz) can crushed tomatoes

  • 4 cups vegetable or chicken broth

  • 1 (15 oz) can cannellini beans, drained and rinsed

  • 1 (15 oz) can kidney beans, drained and rinsed

  • 1 cup small pasta (ditalini, small shells, or elbows)

  • Salt and freshly cracked black pepper, to taste

  • Fresh rosemary or thyme (optional)

To finish:

  • Extra virgin olive oil

  • Fresh parsley or basil, chopped

  • Grated Parmesan or Pecorino Romano

Instructions

  1. Start soft and slow
    Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until tender and aromatic, about 6–8 minutes.

  2. Wake up the aromatics
    Add garlic, oregano, red pepper flakes, and tomato paste. Stir for 1–2 minutes until fragrant.

  3. Simmer the soul
    Pour in crushed tomatoes and broth. Bring to a gentle boil, then lower to a simmer for 10 minutes.

  4. Double the beans
    Add cannellini and kidney beans. Stir well and let them warm through for 3–4 minutes.

  5. Pasta moment
    Add pasta and simmer uncovered, stirring occasionally, until al dente, about 8–10 minutes.

  6. Season & finish
    Season with salt and pepper. Add fresh herbs if using.

  7. Serve generously
    Ladle into bowls and finish with olive oil, herbs, and cheese.
