Winter Glow Citrus & Rosemary Chicken (Sheet Pan Magic)
A bright, beautiful, one-pan holiday dinner
This sheet pan stunner tastes like sunshine wandered into December. Juicy chicken thighs roast in a bath of citrus, rosemary, honey, and garlic until everything caramelizes and perfumes your whole kitchen.
Ingredients
Serves 4
For the chicken
• 4 bone-in chicken thighs, skin-on
• 2 tbsp olive oil
• 1 tbsp honey
• Zest of 1 lemon
• Zest of 1 orange (or blood orange for drama)
• Juice of 1 lemon
• 4 cloves garlic, minced
• 1 tbsp fresh rosemary, chopped
• 1 tsp sea salt
• 1 tsp cracked black pepper
For the pan
• 1 orange, sliced
• 1 lemon, sliced
• 1 red onion, cut into wedges
• Optional: handful of olives for briny contrast
Instructions
Preheat oven to 425 F. Line a sheet pan with parchment.
Whisk olive oil, honey, citrus zest, lemon juice, garlic, rosemary, salt, and pepper.
Toss chicken in the marinade, then nestle onto the sheet pan with citrus slices and onion.
Roast 35 to 45 minutes until the skin crisps and the citrus edges burnish.
Spoon the pan juices over everything and serve warm.
